National October Foods, Coffees, and desserts

 October 1st International Coffee Day

 Caramel  Pumpkin Spice  Cold Brew

What This Is

This is cold coffee. We make it sweet. We use real pumpkin. We add warm spices. We swirl in caramel. It tastes like your favorite pie. But drinkable. And caffeinated. Important.

Ingredients

  • 1 cup strong brewed coffee (cold)
  • 1/4 cup milk (any kind works)
  • 2 tablespoons pumpkin puree (plain, not pie filling)
  • 1 tablespoon caramel sauce (plus extra for glass)
  • 1 tablespoon maple syrup (or simple syrup)
  • 1/4 teaspoon pumpkin pie spice
  • Ice cubes (lots)
  • Whipped cream (optional, but recommended)
  • Extra pumpkin pie spice (for topping, optional
Instructions
Brew Coffee Strong: Make coffee first. Use your normal method. Make it strong. Use 1.5 times your usual grounds. Cool it completely. Put it in the fridge. Use cold brew concentrate if you have it.
Mix Pumpkin Goodness: Find a small jar. Or a glass. Add pumpkin puree. Add caramel sauce. Add maple syrup. Add pumpkin pie spice. Close the jar tight. Shake hard. No jar? Stir very well. Mix until smooth. No lumps.
Prepare Your Glass: Take your drinking glass. Drizzle caramel inside. Swirl it around. Make sticky lines. Looks pretty. Holds flavor.
Build the Drink: Fill the caramel glass with ice. Pour the cold coffee over the ice. Leave space at the top. Pour the pumpkin mixture over the coffee. Stir gently. Mix the layers.
Add Milk: Pour milk over the top. It will swirl nicely.
Top It Off: Add whipped cream. Be generous. Drizzle more caramel sauce on the cream. Sprinkle a pinch of pumpkin pie spice. Looks professional. Tastes amazing.
Drink Immediately: Insert straw. Sip. Enjoy your pumpkin spice victory. Avoid sharing. Hide from candle neighbor.
Pro Tips
Coffee Choice: Dark roast works best. It fights the sweetness. Cold brew concentrate gives smooth taste.
Pumpkin Puree: Must use plain puree. Pie filling tastes wrong. Has sugar and spices already.
Sweetness Level: Adjust maple syrup. Start with 1 tablespoon. Add more later if needed. Taste the mix first.
Milk Swap: Heavy cream makes it richer. Almond milk keeps it lighter. Oat milk adds sweetness.
No Clumps: Shake the pumpkin mix hard. Or whisk it well. Lumpy coffee feels sad. Don’t be sad.
Make Ahead: Mix pumpkin syrup (steps 1 & 2) in a jar. Keep it in the fridge. Up to 3 days. Shake well before using

National Taco Day is October 4th

So here is a low carb Crunchwrap

Ingredients

Butter: Brings richness and helps create an ultra-silky cheese sauce base.
Cream Cheese: Adds creaminess and heft, making the cheese sauce luxuriously smooth.
Heavy Whipping Cream: Lends thickness and a decadent texture to the cheese sauce. ( pour to desired thickness)
Shredded Cheddar Cheese: The star of both the sauce and the topping, giving bold flavor and gooey meltiness.
Large Low-Carb Tortillas: These create the classic crunchwrap “fold”—choose tortillas pliable enough to wrap without breaking.
Small Street-Taco Size Low-Carb Tortillas: Perfectly sized for the crispy interior crunch layer.
Olive Oil: Gives your tortillas that crave-worthy golden, crispy finish in the pan.
Ground Beef: Provides a hearty, meaty filling and classic crunchwrap flavor.
Taco Seasoning: Packs a punch of Tex-Mex flavor into every single bite.
Sour Cream: Adds a refreshing tang and creaminess to balance richer elements.
Shredded Lettuce: Brings freshness and crunch, keeping each bite light.
Tomato: Juicy little pops of sweetness that make the flavors sing.
Additional Shredded Cheddar Cheese: For that irresistible cheesy pull and a finishing touch!

How to Make Keto Crunchwraps Recipe

Step 1: Prepare the Cheese Sauce
Start your Keto Crunchwraps Recipe adventure by focusing on that dreamy cheese sauce. In a food processor, combine butter, softened cream cheese, and heavy whipping cream, then blend until smooth. This creates a silky base that melts perfectly in the pan. Transfer the mixture to a saucepan over medium heat, and gently stir until bubbly and luscious. Next, sprinkle in shredded cheddar cheese and stir until everything melds into a gloriously creamy sauce. Set aside—trust me, this sauce is what takes your crunchwrap to the next level of comfort.
Step 2: Cook the Ground Beef
Now, add depth of savory flavor by browning your ground beef in a skillet over medium-high heat. As it cooks, break it up with a wooden spoon so you get those beautiful crumbles. Once the meat is no longer pink, drain off any excess fat to keep things from getting soggy. Toss in the taco seasoning and sauté for a couple of minutes—your kitchen will be instantly filled with irresistible aromas!
Step 3: Crisp Up the Small Tortillas
Let’s get that essential “crunch” element going! Heat about a tablespoon of olive oil in a skillet over medium heat. Add your small street-taco size low-carb tortillas one at a time, toasting each side until they’re golden and crispy. These little rounds are the secret to that signature layers-of-texture bite inside your Keto Crunchwraps Recipe.
Step 4: Assemble the Crunchwraps
Lay out a large low-carb tortilla on a clean surface—it’s assembly time! Pile on a generous scoop of seasoned beef, then drizzle with your rich cheese sauce. Gently press a crispy small tortilla over the top, then layer with a dollop of sour cream, a handful of fresh shredded lettuce, chopped tomato, and a final sprinkle of shredded cheddar cheese. Fold the edges of the large tortilla up and over the filling, pleating tightly to form that iconic hexagonal crunchwrap shape.
Step 5: Toast and Seal
To finish, heat a clean skillet with the remaining olive oil over medium heat. Place your assembled crunchwrap seam-side down, using a spatula to gently press and seal the edges. Cook each side until delectably golden and crisp—about 2 to 3 minutes per side. When you lift them from the pan, you’ll hear the subtle crackle that tells you the magic is about to begin!

I am pretty Sure you all know how to make a regular taco but for our non low carbers here is an option to try

Wrap tortillas in a damp paper towel and microwave for 30-60 seconds until pliable.
Brush one side of each tortilla with olive oil. Place the tortilla on a baking sheet, oiled side down. Add 2 tablespoons of cheese to half of the tortilla, top with ¼ cup of beef, then add 2 more tablespoons of cheese. Fold the tortilla over the filling.
Repeat with the remaining tortillas and range the tacos in a single layer on your baking sheet.
Bake for 16 minutes, or until tortillas are crispy and cheese is melted. Let tacos cool for 3 minutes before serving.
